Simple Salad

This salad reminds me of my time at Applebee’s as a kid, which their dishes weren’t always that healthy… so this is a twist! I purposefully left things in it like breaded cheese and shredded cheese to help those that struggle to get enough veggies. This salad to me is a good veggie salad for beginners!

Ingredients:

2 big handful of lettuce chopped

1 handful of spinach chopped 

2 hard boiled eggs, sliced

½ cup of cherry tomatoes 

½  cucumber, chopped

½ purple onion, chopped

½ cup or handful of shredded cheese 

Directions:

Put together in salad bowl and add dressing of choice. You can use something light like balsamic vinaigrette that doesn’t have more than 5 grams of added sugars
