Someday I wish to be as talented as someone like Half Baked Harvest or Stripped Nutrition, but in most seasons of my life I have really gravitated towards simple recipes that taste good (obviously)

So here is another simple breakfast idea that has protein, minerals and will give you energy to start your day.

Cottage Cheese Toast + Fruit

  • 1/2 cup-1 cup of whole milk cottage cheese (with out any additives)

  • 1 - 2 pieces of toast. I prefer sprouted bread to get more nutrients, but any will do

  • 1-2 spoonfuls of sundried tomatoes or if you like it sweet you could use jelly

  • Side of fresh fruit that is in season


Place 1/2 cup of cottage cheese on toasted bread. Top with sundried tomatoes. Cut up fruit to serve. Repeat this if you are having two pieces of toast instead of one!
