Summer Salad Recipe

High protein in protein,

High in minerals and SO refreshing on a summer day

Ingredients:

  • 10 ounces of cottage cheese (Good Culture brand is by FAR by favorite! I buy whole milk cottage cheese for more calcium, good fats and protein)

  • 1-2 green onions, sliced thin

  • 1/2 cucumber, diced.

    *My grandmas original recipe calls to peel and remove seeds from cucumber, but I like the nutrients from the skin and it’s less work to just dice :)

Directions:

Place all ingredients in a bowl and gently mix! Add pepper to taste. I personally like it better when it has been sitting in the fridge for an hour (onions do their flavor work), but you can for sure eat it immediately!
