Rotisserie Chicken is Changing My Life
I'm not kidding when I say rotisserie chicken is changing my life. Yes, I'm actually taking time to write a blog post about rotisserie chicken, but that's just how much I love it. It is a game changer when it comes to meal prepping, creating healthy meals and hitting your protein goals. So I wanted to share what I use rotisserie chicken for each week and why it's worth the price!
I have tried for a really long time to figure out how to cook chicken in the skillet or the oven and I always hate it! I do think grilling is better so if that's something you enjoy, you could absolutely grill a ton of chicken breasts and be able to use that for meal prep.
But because rotisserie chicken is so good, like I mentioned in the beginning, it's worth the extra price. I will typically get one or two on Sunday and shred it to use for a few days. If I want to make it for another meal towards the end of the week, I will go get a fresh one on Wednesday or Thursday.
Another reason I think this is a game changer is because it can be difficult to find the time and energy to cook so this takes a step out of your evening meal time. It also can be energy sucking to try to decide what to eat. I get more ideas on what meals I can do when I have it ready in the fridge. I think because I don't have to stress about making the chicken breast...I'm already confident that I have a really good tasting meat so regardless if I choose something simple like chicken and vegetables or try a more detailed recipe, I know it's going to end up pretty good.
Here is how I have been using it in my own routine lately:
Believe it or not I have been using it for breakfast. I really struggle to get enough protein in the morning. Protein makes a HUGE difference in energy. Trust me, if you start journaling the days that you feel good and the days you don't feel as good, I would put my money on protein in the morning. I will literally just eat a few pieces of chicken with my minerals and then as I start to get more hungry, I will have yogurt or something more traditional for breakfast.
I also use shredded chicken to prep salads. My husband, Adam, is trying to bring more food to work and he really likes salads. I'll just shred up some chicken with spinach, tomatoes, onions and maybe some cheese. Here is a recipe I use pretty frequently that is a cobb like salad that is begging for shredded chicken in it.
Other ideas for chicken:
Use it for dinner time meals like chicken and vegetables, chicken pasta, tacos, burritos buffalo chicken recipes, skillet recipes
Pretty much any chicken recipe you like you could use shredded rotisserie chicken and it would save you a step of cooking (for some reason chicken pot pie just came to mind?)
Greek wraps
BLT wrap
Classic Cobb wrap
Almost any salad you like!
