Easy Meal Idea for Energy
Easy meals are where it’s at when you are trying to get in a good habit if fueling your body. When I have time I’ll get creative in the kitchen, but I don’t enjoy doing that every day. So here is a quick meal that is easy to make since it uses just a handful of ingredients and 1 pan
[I'm a fan of less clean up :)]
Teriyaki Chicken
Ingredients:
2 chicken Breasts
2 cups of chopped broccoli
1 cup of baby carrots
2 tbsp of Coconut aminos (or Soy Sauce)
2 tbsp of sesame oil
1/2 cup of OJ or juice from an orange
2 tbsp of raw honey
2 tbsp of rice vinegar
4 garlic gloves, minced
1tbsp of sesame seeds
And if that ingredient list is too much for you, you could honestly just use coconut aminos, salt and pepper & call it a day.
Directions:
Preheat oven to 375ºF and line a baking sheet with foil or parchment paper.
2. Place the chicken breasts on the baking sheet with the broccoli & carrots or any veggies you have on hand.
3. In a small bowl, put together the coconut aminos, sesame oil, orange juice, honey, rice vinegar, garlic and ginger. Pour half the sauce over the chicken and drizzle the rest over
the veggies.
4. Bake for 30 minutes, or until chicken is fully cooked. Remove the pan from the oven and sprinkle with sesame seeds. This serves at least 2!
